I'm looking forward to this, but considering you are refering to the original being the Disney Animated version this isn't really a remake of sorts. This will probably be fairly accurate to the book, while the Disney version was a bit more...cheerful.
She is marginalizing and spotlighting the Mexican Culture. Explain to her how you did take offense and show her "well you are X so you are all X, no offense." Show her that it is offensive even if she thinks that saying no offense is justification enough to go ahead and keep saying it.
The first paragraph has a very strong poetic feel. With this short of a piece, you really give us a clear cut sufferage within the first 4 paragraphs, leading me to think you are writing from the stand point of someone kidnapped or enslaved. In a sense you are, but I didn't really forsee the vampiric qualities till the end which was a nice little twist.
