Well, I doubt there's many more choices other than Demyx and Lexaeus, so... I'ma flip a coin for my vote. Reason being that Lexaeus not only barely ever flinches, but his rock attacks are both quick and have decent range. Plus his DM... if the DM can be used, that is. As for Demyx, his water attacks would make it a pain to try and get close to him for other bosses, and they also cover wide areas. I vote Demyx.

I'm not entirely sure for a better method, but here; 01CB9736 00000018 Gives Sora Auron's moveset. If you have Kingdom Key equipped, it gives him Auron's weapon by default

Nah, I just accidently deleted my turn... x-x One moment -Edits this post- I activate my two face down cards, the first being: In order to get rid of one of your face down cards. The second being: Destroying your Wildheart. I then use Bladedge's attack as a chain to flip up my remaining face down: Dealing 2600 damage to your life points! My turn. (Hopefully) First I summon: In attack mode. Then I play: And: Allowing me to summon: And using the card in my hand's effect, I discard Daedalus to special summon: And then activating its effect. There are no longer any cards on the field and/or hand, allowing me to attack directly with 2900 attack points. And maybe ending the duel. Maybe. Note I'll be entering my main phase 2 if I don't get to use the effect.
I think Sephy vs Lexaeus might not be as entertaining, personally. Wouldn't most of Sephiroth's attacks be interrupted because Lexaeus hardly ever "flinches"?
