Well the gunblade doesn't actually LOOK noticeably different in terms of combat. Squall's attacks are just regular sword slashes but with explosions.
Aesthetically, seeing a keyblade look like a gunblade could be cool, but isn't that basically what the keyblades you get from Leon are?
