Because, you know, maybe they didn't want to reveal Vanitas before the game he makes his debut, or they didn't want to add a plot-hole, or they didn't want to change the game system just to add something that would be probably useless and one character that wouldn't have any reason to be in, and has no relations to any of the characters on said game(non-cameo ones anyway)...
