Most likely in versus mode. Not sure about in the story mode.

They actually did show some Sephy gameplay during the trailer and I'm pretty sure it will be during story mode.

 

They did, but you can't confirm if that's a player playing or a CPU/AI enemy.

EDIT: Looked it up on wiki, which states '20 playable characters'. So I guess you can play both sides.
